I used to be one of those people who never ate breakfast but lately I’ve been making it a point to consume something every morning, whether it’s just a smoothie, a piece of fruit or a more filling meal which is usually reserved for the weekends. Because I have no time to be cooking or cleaning on a typical weekday morning, my thing is that my breakfasts need to take 5 minutes or less to make. One of my favorites is a simple fruit salad kicked up a notch with a blend of super seeds sprinkled on top for added nutrition. I use whole berries and if anything needs to be chopped up, I do it the night before. This salad consists of raspberries, blackberries, blueberries, strawberries and kiwi sprinkled with a topping of chia, hemp and flax seeds which are all high in protein, omega-3 fatty acids, antioxidants, fiber plus numerous other healthy vitamins and minerals. I also added a drizzle of honey and some coconut chips for an extra dose of natural sweetness plus a hearty crunch! This is quick and simple to make, tastes delicious and helps give me the boost of energy I need to power through the morning. Give it a try using any combination of your favorite fruits and super seeds and this just might become one of your favorite quickie breakfasts too!
