During the summer I love to have a yummy cold drink on hand to enjoy on a hot day or to have on hand when guests drop by and this summer, my go-to has been my homemade watermelon lemonade! Not only is it deliciously fruity and refreshing, it’s also  quick and easy to make! You can enjoy it alone or mix it 50/50 with your favorite beer to make a refreshing summer shandy! (I’ve been indulging in this all summer long too!) Here’s how you make it!

Ingredients:
1 cup or so of fresh lemon juice
1 cup of sugar
16 oz of watermelon juice
Water

Preparation:
Juice your lemons and add to pitcher. 5-6 lemons should give you about a cup. Next, puree your watermelon using a high speed blender or juicer and extract 16 oz of juice which you will pour in with the lemon juice. Stir a bit of very warm water in with your sugar to help it fully dissolve leaving you with a simple syrup mixture. Stir the syrup in with your fruit juice. Then add cold water to fill up your pitcher. Give it a taste and adjust any ingredients accordingly. Garnish with a watermelon or a lemon wedge and enjoy with ice!

Notes: I use an inexpensive citrus juicer which makes the juicing process very efficient and ensures I’m extracting every drop of juice from my lemons.  I had a 13lb watermelon and blended 1/4 of it which filled up a 16oz mason jar with juice. You can add more or less lemon or watermelon juice to taste. I used 7 lemons because I like my lemonade extra tart. You’ll want to add the water to your pitcher little by little, tasting as you go along until you achieve a flavor that you’re happy with. As an FYI, my pitcher shown here is 80oz.
