It’s finally feeling like summer and all I’m craving is refreshing summer fruit which is my favorite healthy snack to enjoy in the midst of the summer heat. Did you know that it’s currently peak season for blueberries and strawberries? Yup, these favorite fruits of mine are a staple in my fridge this time of year since they’re plentiful, extra sweet and a lot less expensive when in season. I came across this Quinoa fruit salad recipe on Pinterest made with blueberries, strawberries, mangoes and quinoa. The addition of quinoa in a fruit salad intrigued me and I’m a big quinoa fan so combined with my favorite fruits, a sweet honey lime dressing and a fresh mint garnish, you can’t go wrong with this recipe!
Here are the ingredients you’ll need:
For the quinoa:
1 cup quinoa
2 cups water
Pinch of salt
For the Honey Lime Dressing:
Juice of 1 large lime
3 tablespoons honey
2 tablespoons finely chopped fresh mint
For the fruit:
1 1/2 cups blueberries
1 1/2 cups sliced strawberries
1 1/2 cups chopped mango
Extra chopped mint, for garnish-optional
