Once upon a time I used to never eat breakfast. For years, the only thing remotely close for me was a cup of coffee on the way to work. And we all know the cliché fact that breakfast is the most important meal of the day. A few years ago when I dedicated myself to living a healthier lifestyle, I began forcing myself to have a morning meal each day which I’ve been pretty successful at sticking with. I’m always short on time so I bought a Vitamix and several times a week I’ll make a smoothie or a protein shake for a quick and easy morning meal. Recently, I started experimenting with different kinds of smoothie bowls and came up with a killer green smoothie bowl, inspired by an acai bowl from my favorite juice bar and it has quickly become my favorite breakfast meal ever. It’s great for when I want something a bit heartier plus it is completely delicious, full of nutrients and really helps get me going in the morning. I’m obsessed! This also makes for a great mid-day snack or healthy desert! To make it, I whip up my favorite green smoothie with a thicker consistency and simply top it with all of my favorite fruits, seeds and grains. Here’s are the details:
AMAZING GREEN SMOOTHIE BOWL
For the Smoothie Base:
2 cups spinach
1/2 cup coconut water (you can add more to reach your desired consistency)
1/2 cup frozen mango chunks
1/2 cup frozen pineapple chunks
1/2 of a large frozen banana
1 scoop of protein powder (optional – I use Tera’s Whey)
For Garnish:
Sliced bananas
Sliced strawberries
Whole blueberries
Chia seeds
Homemade granola
Dried, sweetened coconut flakes
Preparation:
Using a high speed blender, blend your spinach and coconut water together first. Then add in the frozen ingredients. As the mixture starts to thicken, you may need to use a tamper or stop the blender down and mix with a spoon a few times until you reach your desired consistency. Once your smoothie base is mixed, add sliced fruit and other desired toppings. Enjoy!

This looks delicious! Breakfast is actually my favorite meal of the day, so I never skip on it. I am definitely going to make this tomorrow morning.
