Valentine’s Day is really just an excuse to eat chocolate – which is why I am fully embracing it this year! Since I’m a card carrying member of the single girl’s club and likely won’t be receiving any chocolate (womp womp!) I figured I’d take matters into my own hands and treat myself! I spotted this adorable little Valentine’s Day bake cup kit at Sur La Table and these gave me the perfect excuse to make chocolate cupcakes! I love recipes that are simple and my go-to is this one-bowl chocolate cupcake recipe from Martha except I make modifications for a gluten and dairy free version of the batter and included the recipe below. These turned out so cute and so yummy!
Gluten-Free One Bowl Chocolate Cupcakes
Ingredients:
1 1/2 cups all-purpose gluten-free baking mix*
3/4 cup unsweetened cocoa powder
1 1/2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
3/4 teaspoon salt
2 large eggs
3/4 cup warm water
3/4 cup soy buttermilk (just whisk 1tbsp lemon juice into your soy milk then let sit for 5 minutes)
3 tablespoons safflower oil
1 teaspoon pure vanilla extract
*A baking mix eliminates the need for the mixing of various flours. Look for one with xanthan gum already in the blend. I used this gluten-free mix from Pillsbury. You can get the regular, non gluten-free version of this recipe here.
Preparation:
Sift all the dry ingredients together. Then add in all of your wet ingredients and mix together until batter is smooth. Divide evenly among bake cups and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Frosting:
Vanilla buttercream recipe here. Just add a few drops of red food coloring to turn your frosting pink. Top with Valentine’s Day sprinkles to complete.
